Ingredients

4 slices of sourdough bread

4 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup shredded mozzarella cheese

2-3 fresh jalapeños, sliced (remove seeds for less heat)

2 tbsp pickled jalapeños, finely chopped (optional)

1/4 cup crispy bacon bits (optional)

2 tbsp unsalted butter, softened

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and black pepper, to taste

Fresh cilantro or green onions for garnish (optional)

Instructions

Prep the Jalapeño Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, mozzarella cheese, sliced fresh jalapeños, pickled jalapeños (if using), and bacon bits (if using). Stir in garlic powder, smoked paprika, salt, and pepper until well mixed.

Assemble Sandwiches: Take two slices of sourdough bread and spread a generous amount of the jalapeño cheese mixture on each slice. Top with the remaining two slices of bread to create two sandwiches.

Butter the Bread: Spread the softened butter evenly on the outer sides of each sandwich. This will help achieve a golden-brown crust when grilling.

Grill the Sandwiches: Heat a skillet or griddle over medium heat. Once hot, place the sandwiches in the pan. Cook for about 3-4 minutes on one side or until golden brown.

Flip and Finish Cooking: Carefully flip the sandwiches using a spatula. Cook for an additional 3-4 minutes until the other side is also golden brown, and the cheese is melted. If needed, adjust the heat to avoid burning the bread while allowing the cheese to melt fully.

Slice and Serve: Remove the sandwiches from the skillet, let them cool slightly, then slice them in half. Garnish with fresh cilantro or thinly sliced green onions, if desired.

Enjoy: Serve warm and pair with your favorite dipping sauce, such as ranch or spicy mayo, for the ultimate experience.
