Ingredients

2 cups shredded cooked chicken (rotisserie chicken works great)

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/4 cup ranch dressing (choose a keto-friendly option)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

6 large low-carb tortillas (such as almond flour or coconut flour)

6 slices of cooked bacon, crumbled

1 cup shredded cheddar cheese

Avocado oil spray or oil for frying

Optional toppings: sour cream, avocado slices, fresh cilantro, diced tomatoes

Instructions

Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.

Make Filling: In a large mixing bowl, combine the shredded chicken, mozzarella cheese, cream cheese, ranch dressing, garlic powder, onion powder, paprika, and crumbled bacon. Stir until fully combined and creamy.

Assemble Taquitos: Warm the tortillas slightly in the microwave (about 15-20 seconds) to make them pliable. Take a tortilla and add about 3-4 tablespoons of the chicken mixture in a line along one side of the tortilla. Sprinkle some shredded cheddar cheese on top of the mixture. Roll the tortilla tightly around the filling, securing the ends as you go.

Prepare for Baking/Frying: Place seams side down on the lined baking sheet. Continue rolling the remaining tortillas until all the filling is used.

Cooking: If baking, spray the tops of the taquitos lightly with avocado oil spray. Bake in the preheated oven for about 15-20 minutes or until golden brown and crispy, flipping halfway through. If frying, heat a skillet over medium heat with enough oil to cover the bottom (about 1/4 inch). Fry the taquitos in batches for 3-4 minutes on each side or until golden and crispy.

Serve: Once done, remove from the oven or skillet and let cool slightly before serving. Top with your desired toppings like sour cream, avocado slices, fresh cilantro, or diced tomatoes.

Enjoy: Serve warm and enjoy these delicious keto-friendly taquitos as a snack, appetizer, or a meal!
