Key lime pie has a rich and intriguing history that traces back to the early 19th century in the Florida Keys. The dessert is believed to have originated from the small, round key limes native to the region, which are smaller and more aromatic than their Persian counterparts. These key limes were a staple for early settlers in the area, who relied on them for their refreshing flavor and high acidity.

Ingredients

1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

4 large egg yolks

1 can (14 ounces) sweetened condensed milk

½ cup fresh key lime juice (or regular lime juice)

Zest of 2 key limes

1 teaspoon pure vanilla extract

Whipped cream (for topping)

Lime slices and zest (for garnish)

Instructions

Prepare the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand. Press it firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes or until lightly golden and fragrant. Remove from the oven and allow it to cool completely.

Make the Filling: In a medium bowl, whisk the egg yolks until they are pale and thick. Gradually add the sweetened condensed milk and continue whisking until smooth. Incorporate the key lime juice, lime zest, and vanilla extract, mixing until well combined.

Bake the Pie: Pour the lime filling into the cooled graham cracker crust. Bake in the preheated oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center. Avoid over-baking, as this could cause cracks.

Chill: Once done, remove from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight, to allow it to firm up and the flavors to meld.

Serve: When ready to serve, top with a generous dollop of whipped cream. Garnish with lime slices and additional lime zest for an extra pop of color and flavor.
