1 medium head of cauliflower, cut into florets

8 oz (about 2 cups) elbow macaroni (or gluten-free pasta)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup milk (whole or plant-based)

¼ cup unsalted butter

¼ cup all-purpose flour (or gluten-free flour)

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika (optional)

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, or until slightly tender but not fully cooked. Remove from heat, drain, and set aside.

    Cook the Pasta: In the same pot of boiling water, add the elbow macaroni and cook according to package instructions. Drain and set aside.

      Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes, stirring constantly until it becomes golden.

        Add Milk and Cheese: Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the mixture thickens, about 3-5 minutes. Reduce the heat to low and add in the sharp cheddar and mozzarella cheeses, stirring until melted and smooth.

          Season the Sauce: Add garlic powder, onion powder, smoked paprika (if using), and season with salt and pepper to taste. Mix well to incorporate all the flavors.

            Combine Ingredients: Add the cooked pasta and steamed cauliflower to the cheese sauce, stirring gently to coat all the pasta and cauliflower in the cheesy goodness.

              Optional Breadcrumb Topping: If using breadcrumbs, preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased baking dish. Sprinkle breadcrumbs evenly over the top for a crunchy finish. Bake for about 20-25 minutes until bubbly and golden brown.
