1 lb ground turkey

1 medium sweet potato, peeled and diced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup shredded cheese (cheddar or Mexican blend)

¼ cup sour cream or Greek yogurt (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Sweet Potatoes: In a medium pot, bring salted water to a boil. Add the diced sweet potatoes and cook for about 8-10 minutes until tender. Drain and set aside.

    Sauté the Turkey: In a large skillet, heat the olive oil over medium heat. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook for about 5-7 minutes until the turkey is browned and cooked through.

      Season the Mixture: Once the turkey is browned, add the cooked sweet potatoes to the skillet. Sprinkle in the cumin, chili powder, garlic powder, onion powder, paprika, salt, and pepper. Stir well to combine and cook for an additional 2-3 minutes until everything is heated through and the flavors meld together.

        Warm the Tortillas: While the turkey and sweet potato mixture is cooking, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in a damp paper towel and microwave for about 20-30 seconds.
