Korean BBQ Meatballs

1 lb ground beef (or ground pork for a different flavor)

1/2 cup panko breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tsp ginger, grated

1/4 cup soy sauce

1 tbsp Gochujang (Korean chili paste)

1 tbsp sesame oil

1 tbsp honey or brown sugar

1 tsp sesame seeds (for garnish)

Salt and pepper to taste

Optional: fresh cilantro or additional green onions for garnish

Instructions
 

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, panko breadcrumbs, chopped green onions, garlic, ginger, soy sauce, Gochujang, sesame oil, honey (or brown sugar), and a pinch of salt and pepper. Mix until just combined, being careful not to overmix.

    Shape the Meatballs: Preheat your oven to 400°F (200°C). With your hands, form the mixture into meatballs, approximately 1 to 1.5 inches in size, and place them on a baking sheet lined with parchment paper.

      Bake the Meatballs: Once the oven is preheated, bake the meatballs for about 20-25 minutes, or until they are browned and cooked through (internal temperature should reach 160°F or 70°C).

        Prepare the Glaze: While the meatballs are baking, in a small saucepan over medium heat, combine 2 tbsp of soy sauce, 1 tbsp of Gochujang, 1 tbsp of honey, and 1 tsp of sesame oil. Stir until it simmers and thickens slightly (about 3-5 minutes), then remove from heat.

          Glaze the Meatballs: After baking, remove the meatballs from the oven and brush the warm glaze over them. Alternatively, you can toss the meatballs in the glaze in a large bowl for a more even coating.

            Serve: Transfer the meatballs to a serving platter and garnish with sesame seeds and extra green onions or cilantro, if desired. Serve with steamed rice or in lettuce wraps for a delicious meal!
