1 lb (450g) flank steak, thinly sliced against the grain

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

3 cloves garlic, minced

1 inch ginger, grated

1 tablespoon rice vinegar

2 teaspoons cornstarch

For the Bowls:

2 cups cooked jasmine or sticky rice

1 cup kimchi (store-bought or homemade)

1 cup broccoli florets

1 carrot, julienned

3 green onions, sliced

1 tablespoon sesame seeds

2 teaspoons vegetable oil

Optional Toppings:

Fried eggs

Sriracha or Gochujang for added heat

Marinate the Beef: In a medium bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and cornstarch. Mix well and add the sliced flank steak, ensuring the beef is fully coated. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Veggies: While the beef marinates, steam the broccoli florets until bright green and slightly tender, about 3-4 minutes. Set aside.

      Cook the Beef: In a large skillet or wok, heat vegetable oil over medium-high heat. Once the oil is hot, add the marinated beef in a single layer (you may need to do this in batches). Sear the beef for about 2-3 minutes per side until browned and cooked through. Remove from heat and let rest.

        Assemble the Bowls: Divide the cooked rice among four bowls. Top each bowl with the cooked beef, steamed broccoli, julienned carrots, and a generous serving of kimchi.
