Ingredients
  

1 lb Italian sausage (or ground beef)

1 medium onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 tsp dried oregano

1 tsp dried basil

1 tsp red pepper flakes (optional)

8 oz large pasta shells or mafaldini pasta

2 cups fresh spinach

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. If using ground beef, drain excess fat.

    Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and sauté for another minute until fragrant.

      Pour in the crushed tomatoes and add the chicken or vegetable broth. Stir in the dried oregano, basil, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a boil.

        Once boiling, reduce to a simmer and add the pasta. Cook according to the package instructions until al dente, about 8-10 minutes.

          In the last minute of cooking, stir in the fresh spinach until wilted.

            Remove the pot from heat. In a separate bowl, mix ricotta cheese with a pinch of salt and pepper.

              To serve, ladle the lasagna soup into bowls. Swirl in a dollop of the ricotta mixture, then top with shredded mozzarella and grated Parmesan cheese. Garnish with fresh basil leaves if desired.

                Serve hot, and enjoy this comforting bowl of lasagna-inspired goodness!
