4 fillets of white fish (such as snapper, cod, or tilapia)

2 lemons (1 thinly sliced, 1 juiced)

1 small red onion, thinly sliced

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, roughly torn

4 cloves garlic, minced

4 tablespoons olive oil

Salt and pepper, to taste

Parchment paper or aluminum foil for wrapping

Preheat the Oven: Set your oven to 400°F (200°C).

    Prepare the Papillote: Cut four large pieces of parchment paper or aluminum foil, each about 12x15 inches. Fold each piece in half, then open it back up, creating a crease in the middle.

      Arrange the Ingredients: On one half of each parchment piece, place a fillet of fish. Top each fillet with the sliced red onion, halved cherry tomatoes, and a sprinkle of minced garlic.

        Add Lemon and Basil: Squeeze the juice of one lemon over each fish fillet, then lay the thin slices of the other lemon on top. Scatter the torn basil leaves over the fish and vegetables.

          Season: Drizzle each packet with olive oil and season generously with salt and pepper.

            Seal the Packets: Fold the other half of the parchment over the filling, making sure to crimp the edges tightly to seal in the steam, creating a pocket.

              Bake: Place the packets on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
