Lemon Basil Pesto Pasta

2 cups fresh basil leaves, packed

1/2 cup walnuts (or pine nuts)

2 cloves garlic, minced

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/3 cup extra virgin olive oil

Juice of 1 large lemon

Zest of 1 lemon

Salt and pepper to taste

12 oz pasta of your choice (spaghetti, linguine, or fusilli)

Optional: Cherry tomatoes and arugula for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

    Prepare the Pesto: While the pasta is cooking, combine the basil leaves, walnuts, minced garlic, Parmesan cheese, lemon juice, and lemon zest in a food processor or high-speed blender. Pulse several times until the mixture is finely chopped.

      Add Olive Oil: With the food processor running, slowly drizzle in the olive oil until fully incorporated. If the pesto is too thick, add a bit of the reserved pasta water to reach your desired consistency.

        Season: Taste the pesto and season with salt and pepper as needed. Adjust lemon juice if a stronger citrus flavor is desired.

          Toss with Pasta: In a large mixing bowl, combine the cooked pasta with the pesto, tossing well to coat every strand. If it's too thick, add more reserved pasta water a little at a time until the perfect consistency is achieved.

            Serve: Divide the pasta into serving bowls. Optionally, top with halved cherry tomatoes and fresh arugula for a burst of color and flavor.

              Enjoy: Serve immediately, garnished with additional Parmesan cheese and a squeeze of lemon, if desired.
