1 ½ cups rolled oats

½ cup almond flour

½ cup coconut flour

½ cup maple syrup or honey

1/4 cup coconut oil, melted

1 cup Greek yogurt

1 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons lemon juice

1 cup fresh or frozen blueberries

1 teaspoon baking powder

¼ teaspoon salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easier removal later.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, coconut flour, baking powder, and salt. Stir until well mixed.

      Prepare Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup (or honey), Greek yogurt, vanilla extract, lemon zest, and lemon juice until smooth and creamy.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and fold gently until everything is combined. Be careful not to overmix.

          Add Blueberries: Gently fold in the blueberries, ensuring they are distributed evenly throughout the mixture.

            Bake the Bars: Pour the combined mixture into the prepared baking dish and spread it out evenly with a spatula. Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.

              Cool the Bars: Allow the bars to cool in the pan for about 10 minutes, then use the parchment overhang to lift them out and transfer to a wire rack to cool completely.

                Slice and Serve: Once fully cooled, slice into bars. These can be stored in an airtight container in the refrigerator for up to 5 days.
