4 salmon fillets (about 6 ounces each)

1 pound baby potatoes, halved

3 tablespoons olive oil

2 tablespoons fresh dill, chopped (plus extra for garnish)

Zest and juice of 1 large lemon

4 cloves garlic, minced

Salt and black pepper to taste

1 teaspoon paprika (optional for extra flavor)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, salt, pepper, and paprika (if using). Spread the potatoes evenly on one side of the prepared baking sheet.

      Make the Marinade: In a small bowl, combine the remaining olive oil, fresh dill, lemon zest, lemon juice, and the rest of the minced garlic. Mix well to create a lemon dill sauce.
