Lemon Garlic Chicken Kabobs

1 ½ lbs boneless, skinless chicken thighs, cut into 1-inch cubes

3 cloves garlic, minced

Zest and juice of 2 large lemons

¼ cup olive oil

2 teaspoons dried oregano

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 bell peppers (any color), cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

Fresh parsley, chopped (for garnish)

Skewers (wooden or metal)

Instructions
 

Marinate the Chicken: In a large bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, dried oregano, smoked paprika, cayenne pepper, salt, and black pepper. Mix well and add the chicken cubes. Toss until the chicken is thoroughly coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, you can skip this step.

      Assemble the Kabobs: Thread the marinated chicken cubes onto the skewers, alternating with pieces of bell pepper and red onion. Aim for about 4-5 chicken pieces and 2-3 vegetable pieces per skewer.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). Lightly oil the grill grates to prevent sticking.

          Grill the Kabobs: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and registers an internal temperature of 165°F (75°C). The vegetables should be nicely charred.

            Serve: Remove the kabobs from the grill and let them rest for a few minutes. Garnish with chopped fresh parsley before serving.
