8 oz soba noodles (or any preferred noodles)

1 cup shelled edamame (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 large lemon

2 tablespoons low-sodium soy sauce

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

2 green onions, chopped

1 tablespoon sesame seeds (optional, for garnish)

Fresh cilantro or parsley, for garnish

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the soba noodles and cook according to package instructions until al dente. During the last 2 minutes of cooking, add the shelled edamame. Drain and rinse noodles and edamame under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a small bowl, mix together olive oil, minced garlic, lemon zest, lemon juice, soy sauce, sesame oil, and red pepper flakes. Whisk well until fully combined. Season with salt and pepper to taste.

      Combine the Ingredients: In a large mixing bowl, toss the cooked soba noodles and edamame with the lemon garlic sauce until everything is evenly coated.

        Serve: Divide the noodle bowls among serving dishes. Top with chopped green onions, a sprinkle of sesame seeds, and fresh cilantro or parsley for garnish.

          Enjoy: Serve immediately while the noodles are warm, or let them cool slightly for a refreshing cold noodle dish.
