Lemon Garlic Hummus Veggie Wraps

Ingredients
  

1 cup of homemade or store-bought lemon garlic hummus

4 large whole wheat tortillas or wraps

1 cup of mixed greens (spinach, arugula, or kale)

1 medium cucumber, thinly sliced

1 large carrot, julienned (or grated)

1 bell pepper (red, yellow, or orange), thinly sliced

1 avocado, sliced

¼ cup of crumbled feta cheese (optional)

Fresh herbs for garnish (parsley, cilantro, or dill)

Salt and pepper, to taste

Extra lemon juice, for drizzling

Instructions
 

Prepare the Vegetables:

    Wash and slice the cucumber, carrot, and bell pepper into thin strips. Cut the avocado in half, pit it, and slice it into thin pieces. Set all the veggies aside.

      Spread the Hummus:

        Take one whole wheat tortilla and spread a generous layer of lemon garlic hummus on it, leaving about an inch of space around the edges.

          Layer the Veggies:

            Begin layering mixed greens on top of the hummus followed by sliced cucumber, julienned carrot, bell pepper strips, and avocado slices. If using, sprinkle the crumbled feta cheese on top of the vegetables.

              Season it Up:

                Add a pinch of salt and pepper to taste. Drizzle a bit of fresh lemon juice over the top for an extra zesty kick.

                  Wrap it Up:

                    Starting from one end, tightly roll the tortilla over the filling, tucking in the sides as you go for a neat wrap. Repeat with the remaining tortillas and filling.
