1.5 lbs turkey tenderloin

3 tablespoons olive oil

Juice and zest of 2 large lemons

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon dried thyme

Salt and pepper to taste

1 lb baby potatoes, halved

1 lb green beans, trimmed

Lemon slices, for garnish

Fresh parsley, chopped, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.

    Prepare Marinade: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper until well combined.

      Marinate Turkey: Place the turkey tenderloin in a spacious resealable plastic bag or shallow dish. Pour the marinade over the turkey, ensuring it's well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for enhanced flavor).

        Prepare Vegetables: In a separate bowl, toss the halved baby potatoes with a tablespoon of olive oil, salt, and pepper until evenly coated. Spread them out on one side of the prepared sheet pan.

          Roast Potatoes: Place the sheet pan in the preheated oven and roast the potatoes for about 15 minutes.

            Add Turkey Tenderloin: After 15 minutes, remove the sheet pan from the oven. Push the potatoes aside slightly and nestle the marinated turkey tenderloin in the center of the pan.
