Ingredients
  

1 box lemon cake mix (15.25 oz)

1/2 cup (1 stick) unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

2 cups powdered sugar (for rolling)

1 tablespoon fresh lemon juice

Zest of 1 lemon

Pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the lemon cake mix, melted butter, egg, and vanilla extract. Mix until well combined.

      Stir in the fresh lemon juice, lemon zest, and a pinch of salt. The dough will be soft and sticky, which is normal for gooey butter cookies.

        Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes to firm up slightly.

          Once chilled, use a tablespoon to scoop out portions of dough. Roll each scoop into a ball and then roll it in the powdered sugar until fully coated.

            Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes, or until the cookies have puffed up and the edges are set but the centers still look slightly underbaked.

                Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                  Optionally, dust with additional powdered sugar before serving for an extra sweet touch!
