Ingredients
  

1 cup heavy whipping cream

8 oz cream cheese, softened

1 cup powdered sugar

Zest of 2 lemons

1/2 cup fresh lemon juice (about 2-3 lemons)

1 tsp vanilla extract

2 (14 oz) packages of graham crackers

Fresh berries (such as blueberries or strawberries) for garnish

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the heavy whipping cream and powdered sugar. Whip until stiff peaks form. Set aside.

    In another bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

      Add the lemon zest, fresh lemon juice, and vanilla extract to the cream cheese mixture. Mix until well incorporated.

        Gently fold the whipped cream into the lemon cream cheese mixture until no streaks remain. Be careful not to deflate the whipped cream.

          Take an 8x8-inch baking dish. Now, it's time to layer! Start by placing a single layer of graham crackers at the bottom of the dish.

            Spread a generous layer of the lemon cream mixture over the graham crackers, smoothing it out evenly.

              Repeat the process: layer more graham crackers followed by lemon cream, continuing to alternate layers until you have used up all the cream and graham crackers, finishing with a layer of lemon cream on top.

                Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible. This allows the graham crackers to soften and the flavors to meld beautifully.

                  Once chilled, remove from the refrigerator and slice into squares. Garnish with fresh berries and mint leaves if desired.
