1 cup granulated sugar

½ teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

2 large eggs

⅓ cup vegetable oil

1 teaspoon vanilla extract

½ cup buttermilk (or yogurt mixed with a splash of lemon juice)

Zest of 1 large lemon

2 tablespoons poppy seeds

2 tablespoons fresh lemon juice

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until well combined.
