1 cup ricotta cheese

1 cup all-purpose flour

1/2 cup milk

2 large eggs

1/4 cup granulated sugar

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

Butter or oil, for cooking

Instructions
 

Prepare the Batter:

    In a large mixing bowl, combine the ricotta cheese, milk, eggs, sugar, lemon zest, lemon juice, and vanilla extract. Whisk together until smooth.

      Mix Dry Ingredients:
