Ingredients
  

8 ounces of pasta (farfalle or rotini work well)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, roughly chopped

1 cup baby spinach leaves, chopped

1/2 cup homemade or store-bought basil pesto

1/2 cup Greek yogurt

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Optional: grated Parmesan cheese for serving

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.
