Ingredients
  

4 salmon fillets (6 oz each)

2 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 teaspoons fresh dill, chopped (or 1 teaspoon dried dill)

2 cloves garlic, minced

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 yellow bell pepper, sliced

Lemon slices, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Foil Packs: Cut 4 large pieces of aluminum foil (about 12x18 inches each) and lay them flat on a workspace.

      Mix Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, dill, garlic, salt, and pepper until well combined.

        Assemble Ingredients: Place a salmon fillet in the center of each foil piece. Surround each fillet with cherry tomatoes, zucchini, and bell pepper.

          Drizzle Marinade: Spoon the prepared marinade over the salmon fillets and vegetables evenly, ensuring everything is well-coated.

            Seal Foil Packs: Fold the sides of the foil over the salmon and veggies, then crimp the ends to seal tightly, creating a packet.

              Bake: Place the foil packs on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Serve: Carefully open the foil packs to let the steam escape (be cautious of hot steam). Garnish with lemon slices and extra dill, if desired. Serve immediately.
