1 lb (450g) potato gnocchi

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup mushrooms, sliced

1 cup spinach, fresh or frozen (if using frozen, thaw and drain)

1 tsp Italian seasoning

Salt and pepper, to taste

1 cup marinara sauce

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

¼ cup cooked bacon bits or crumbled sausage (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Gnocchi: Begin by bringing a large pot of salted water to a boil. Add the gnocchi to the boiling water and cook according to package instructions (usually 2-3 minutes) or until they float to the surface. Drain and set aside.

    Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Add Peppers and Mushrooms: Add the diced red bell pepper and sliced mushrooms to the skillet. Season with Italian seasoning, salt, and pepper. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are tender.

        Mix in Spinach and Gnocchi: Add the spinach to the skillet and cook for 2-3 minutes until wilted (if using fresh). Gently fold in the cooked gnocchi, ensuring they are well combined with the vegetables.

          Incorporate Marinara Sauce: Pour the marinara sauce over the gnocchi mixture and stir to combine. Let everything simmer for about 5 minutes, allowing the flavors to meld together.

            Cheese Layer and Bake: Preheat your oven to 400°F (200°C). Sprinkle the mozzarella and Parmesan cheese evenly over the gnocchi mixture. If you’re using bacon bits or crumbled sausage, sprinkle them on top as well.

              Bake: Transfer the skillet to the preheated oven and bake for 10-15 minutes or until the cheese is bubbly and golden brown.
