1 large head of cauliflower, cut into florets

1 cup sharp cheddar cheese, shredded

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup Greek yogurt

1/2 cup cooked bacon, crumbled

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Cauliflower: In a large pot of salted boiling water, cook the cauliflower florets for about 5 minutes until slightly tender. Drain and set aside.

      Make the Cheese Mixture: In a large mixing bowl, combine the cream cheese, sour cream, Greek yogurt, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until the ingredients are well blended and smooth.

        Combine Ingredients: Add the cooked cauliflower, crumbled bacon, half of the shredded cheddar cheese, and half of the green onions into the cheese mixture. Stir gently until the cauliflower is evenly coated.

          Transfer to Baking Dish: Transfer the loaded cauliflower mixture into a greased 9x13 inch baking dish. Spread it out evenly.

            Top with Cheese: Sprinkle the remaining cheddar cheese and grated Parmesan cheese evenly over the top of the cauliflower mixture.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown on top.

                Garnish and Serve: Once done, remove from the oven and allow to cool for a few minutes. Garnish with the remaining green onions and fresh parsley before serving.
