4 large russet potatoes (for homemade fries)

Vegetable oil (for frying or baking)

Salt and pepper (to taste)

Chili:

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper (to taste)

Cheese Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk

1 ½ cups shredded cheddar cheese

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper (to taste)

Toppings:

¼ cup sour cream

¼ cup chopped green onions

¼ cup pickled jalapeños

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Fries:

    If making homemade fries, wash and cut the russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch; this helps achieve extra crispy fries. After soaking, pat dry with a towel.

      Cook the Fries:

        - Frying Method: Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-6 minutes. Remove, drain on paper towels, and season with salt.

          - Baking Method: Preheat oven to 425°F (220°C). Toss potato strips with vegetable oil, salt, and pepper, and spread them evenly on a baking sheet. Bake for about 30-35 minutes, flipping halfway through, until crispy and golden.

            Make the Chili:

              In a large pot over medium heat, add the diced onion and minced garlic, cooking until translucent. Add the ground beef or turkey and cook until browned. Drain excess fat if needed. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Add kidney beans, black beans, and diced tomatoes with green chilies.                 Prepare the Cheese Sauce:

                  In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1 minute. Gradually add the milk, whisking constantly until the mixture thickens, about 3-4 minutes. Remove from heat and add the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir until the cheese is fully melted and smooth.

                    Assemble the Loaded Chili Cheese Fries:
