Loaded Nachos with Cheese Sauce

1 large bag of tortilla chips

1 ½ cups shredded mozzarella cheese

1 ½ cups shredded cheddar cheese

1 can (15 oz) black beans, rinsed and drained

1 cup cooked and crumbled chorizo sausage (optional)

1 cup diced tomatoes (fresh or canned)

1 jalapeño, sliced (optional, for heat)

½ cup sliced black olives

1 avocado, diced

¼ cup fresh cilantro, chopped

1 cup sour cream

1 cup homemade or store-bought cheese sauce

1 teaspoon taco seasoning

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Cheese Sauce: If you are making your cheese sauce, melt 2 tablespoons of butter in a saucepan over medium heat. Whisk in 2 tablespoons of flour and cook for about 1 minute. Gradually stir in 1 cup of milk, and heat until thickened. Add 1 cup of shredded cheese (mix of cheddar and mozzarella) and stir until melted and smooth. Set aside.

      Layer the Chips: Spread half of the tortilla chips evenly on a large baking sheet or oven-safe platter.

        Add Ingredients: Sprinkle half of the shredded mozzarella and cheddar cheese over the chips. Layer with half of the black beans, chorizo (if using), diced tomatoes, jalapeños, and black olives. Repeat the layers with the remaining tortilla chips and toppings, finishing with the rest of the cheese.
