4 large russet potatoes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

½ teaspoon salt

½ teaspoon black pepper

1 cup shredded pepper jack cheese

½ cup diced green onions

½ cup sour cream

¼ cup pimento-stuffed green olives, chopped

2 tablespoons hot sauce (optional)

Instructions
 

Preheat your oven to 425°F (220°C), and line a baking sheet with parchment paper.

    Wash and peel the potatoes, then slice them into thin fries, approximately 1/4 inch thick.

      In a large mixing bowl, toss the potato fries with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well coated.

        Spread the seasoned fries evenly on the prepared baking sheet in a single layer. Bake in the preheated oven for about 30-35 minutes, flipping halfway through, until the fries are crispy and golden brown.

          Remove the fries from the oven and immediately sprinkle the shredded pepper jack cheese over the hot fries. Return to the oven for an additional 5 minutes, until the cheese is melted and bubbly.

            Once out of the oven, drizzle the fries with sour cream and sprinkle with diced green onions and chopped green olives for that tangy umami kick.

              If you love heat, finish with a splash of hot sauce over the top.
