1 medium head of cauliflower (about 4 cups riced cauliflower)

1 cup shredded mozzarella cheese (or dairy-free cheese for a vegan option)

1 large egg

1/2 cup grated Parmesan cheese (can substitute with nutritional yeast for a vegan option)

1/4 cup almond flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley (optional, for garnish)

Olive oil or cooking spray (for greasing)

Instructions
 

Prep the Cauliflower: Start by trimming the cauliflower into florets. Steam or microwave the cauliflower florets for about 5-7 minutes until tender. Once cooked, drain the cauliflower and let it cool slightly.

    Rice the Cauliflower: After cooling, finely chop the steamed cauliflower florets or place them in a food processor and pulse until it resembles rice. Make sure to avoid a puree; the texture should be coarse.

      Remove Excess Moisture: Place the riced cauliflower in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible - this step is crucial for achieving a crispy texture.

        Mix Ingredients: In a large mixing bowl, combine the drained riced cauliflower, mozzarella cheese, egg, Parmesan cheese, almond flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined and form a cohesive dough.

          Shape the Tots: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Using your hands, take small amounts of the mixture and form small tot shapes, placing them on the prepared baking sheet. Leave space between each tot for even cooking.

            Bake: Lightly spray the tots with olive oil or cooking spray to help them crisp up. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
