4 medium zucchinis

1 cup marinara sauce (low-carb)

1 ½ cups shredded mozzarella cheese

½ cup pepperoni slices (or any preferred toppings like bell peppers, mushrooms, olives)

1 teaspoon Italian seasoning

1 teaspoon garlic powder

Fresh basil leaves for garnish (optional)

Salt and pepper to taste

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash the zucchinis and slice them in half lengthwise. Use a spoon to scoop out the center, creating enough space for the toppings. Sprinkle a pinch of salt on the insides to help draw out moisture.

      Sauté the Filling: In a pan over medium heat, add the scooped zucchini centers with a bit of olive oil. Sauté for 3-4 minutes until they soften. Add garlic powder and Italian seasoning, stirring to combine. Remove from heat.

        Assemble the Pizza Boats: Place the zucchini halves on the prepared baking sheet, cut side up. Spoon marinara sauce evenly into each zucchini half. Evenly distribute the sautéed zucchini filling over the sauce, then sprinkle them with shredded mozzarella cheese and top with pepperoni (or your choice of toppings).

          Bake: Place the baking sheet in the oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
