2 cups all-purpose flour

1 cup granulated sugar

1/2 cup olive oil

1 cup balsamic vinaigrette (store-bought or homemade)

2 large eggs

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup shredded mozzarella cheese

1/2 cup diced cherry tomatoes

Fresh basil leaves (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar until well combined.

      Mix Wet Ingredients: In a separate bowl, mix the olive oil, balsamic vinaigrette, and eggs until they are fully emulsified.

        Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir using a spatula just until combined. Be careful not to overmix; it’s okay if there are a few lumps.

          Add Cheese and Tomatoes: Gently fold in the shredded mozzarella cheese and diced cherry tomatoes until they are evenly distributed in the batter.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. This allows space for the muffins to rise.

              Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes. Then, transfer them to a wire rack to cool completely.

                  Garnish (Optional): If desired, top each muffin with a fresh basil leaf for a pop of color and added flavor before serving.
