4 ripe mangoes, peeled and diced

1/2 cup freshly squeezed lime juice (about 4 limes)

1/2 cup granulated sugar (adjust based on sweetness of mangoes)

1/2 cup water

Zest of 2 limes

A pinch of salt

Optional: fresh mint leaves, for garnish

Prepare the Mangoes: In a blender, combine the diced mangoes and blend until smooth. You should have about 4 cups of mango puree.

    Make the Sugar Syrup: In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let cool.

      Mix the Ingredients: In a large mixing bowl, combine the mango puree, freshly squeezed lime juice, lime zest, and a pinch of salt. Stir well to incorporate all the ingredients.

        Combine with Syrup: Pour the cooled sugar syrup into the mango-lime mixture, stirring until fully blended. Taste and adjust sweetness if needed.

          Chill: Cover the bowl and refrigerate the mixture for at least 2 hours or until chilled.

            Churn the Sorbet: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until the sorbet reaches a soft-serve consistency.

              Freeze: Transfer the churned sorbet to an airtight container and freeze for at least 4 hours, or until firm.
