4 boneless pork chops (about 1 inch thick)

1/2 cup pure maple syrup

1/4 cup bourbon

2 tablespoons apple cider vinegar

2 tablespoons soy sauce

2 tablespoons Dijon mustard

1 tablespoon olive oil

2 cloves garlic, minced

Salt and pepper, to taste

Fresh thyme leaves, for garnish (optional)

Marinate the Pork Chops: In a medium bowl, whisk together the maple syrup, bourbon, apple cider vinegar, soy sauce, Dijon mustard, minced garlic, salt, and pepper. Reserve 1/4 cup of the marinade for glazing later. Place the pork chops in a zip-top plastic bag or a shallow dish, and pour the remaining marinade over them. Seal or cover and let marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.

    Prepare the Grill or Skillet: If using a grill, preheat it to medium-high heat. If using a skillet, heat the olive oil over medium-high heat in a large oven-safe skillet.

      Cook the Pork Chops: Remove the pork chops from the marinade and let any excess drip off. Cook the chops for about 4-5 minutes on each side until they develop a nice sear and are cooked through (internal temperature should reach 145°F/63°C).
