Ingredients

For the Mousse:

1 cup heavy whipping cream

1 cup semi-sweet chocolate chips

1 teaspoon vanilla extract

2 tablespoons powdered sugar

1/2 cup fresh raspberries (plus more for garnish)

For the Crust:

1 cup chocolate graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons granulated sugar

For the Topping:

Whipped cream (store-bought or homemade)

Fresh raspberries

Dark chocolate shavings or cacao nibs (for an extra touch)

Instructions

Prepare the Crust:

    - In a medium bowl, combine the chocolate graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and achieve a sandy texture.

      - Press the mixture evenly into the bottom of serving cups or small glasses (about 8-10 cups). Place them in the refrigerator to set while you prepare the mousse.

        Make the Chocolate Mousse:

          - In a microwave-safe bowl, melt the semi-sweet chocolate chips. Heat in 30-second intervals, stirring in between until completely melted and smooth. Allow it to cool slightly.

            - In another large mixing bowl, using an electric mixer, whip the heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form (about 3-4 minutes).

              - Gently fold about half of the whipped cream into the melted chocolate mixture until combined. Then, carefully fold the remaining whipped cream in, being cautious not to deflate the mixture.

                - Once combined, fold in the fresh raspberries gently, leaving some whole for decoration.

                  Assemble the Cups:

                    - Spoon the raspberry chocolate mousse into the prepared crust cups, filling them generously to the top.

                      - Cover the cups with plastic wrap and refrigerate for at least 2-3 hours or until ready to serve, allowing the mousse to set perfectly.

                        Serve:

                          - Just before serving, top each mousse cup with a dollop of whipped cream, garnish with fresh raspberries, and sprinkle with dark chocolate shavings or cacao nibs for an added crunch.

                            Enjoy:

                              - These Marry Me No Bake Raspberry Chocolate Mousse Cups are perfect for special occasions or a delightful treat to impress someone you love!
