Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for heat)

1 lemon, zested and juiced

1/4 cup honey

2 tablespoons Dijon mustard

1/4 cup fresh parsley, chopped

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Marinade: In a small bowl, whisk together the olive oil, salt, black pepper, garlic powder, smoked paprika, cayenne pepper (if using), lemon juice, and honey until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish, skin-side down. Pour the marinade over the salmon fillets, ensuring they're well-coated. Allow them to marinate for at least 15 minutes at room temperature (or up to 1 hour in the refrigerator for more intense flavor).

Bake the Salmon: Transfer the marinated salmon to the prepared baking sheet. Pour any leftover marinade over the top. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Garnish and Serve: Once out of the oven, sprinkle fresh parsley over the cooked salmon fillets and zest a little more lemon on top for brightness. Serve hot with lemon wedges on the side for an extra zing.
