Ingredients

4 (6-ounce) salmon fillets

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup heavy cream

1/2 cup cherry tomatoes, halved

1 cup baby spinach

1/4 cup freshly grated Parmesan cheese

1 tablespoon lemon juice

Fresh basil leaves, for garnish

Instructions

Prep the Salmon: Rinse the salmon fillets under cold water and pat dry with paper towels. Season both sides with salt and pepper.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant (don't let it burn!).

Cook the Salmon: Carefully place the seasoned salmon fillets in the skillet, skin-side down. Cook for about 4-5 minutes on each side, or until the salmon is golden brown and flakes easily with a fork. Remove the salmon from the skillet and set aside.

Make the Sauce: In the same skillet, pour in the heavy cream and bring to a gentle simmer. Add the halved cherry tomatoes and baby spinach, stirring until the spinach wilts (about 2 minutes).

Add Cheese and Lemon: Stir the Parmesan cheese and lemon juice into the sauce. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly. Taste and adjust seasoning, adding more salt or pepper if necessary.

Combine and Serve: Return the salmon to the skillet, spooning the creamy sauce over the top. Cook for another 1-2 minutes until everything is heated through.

Plate: Serve the salmon on a plate, drizzled with the creamy sauce and garnished with fresh basil leaves. You can serve this delightful dish with a side of steamed veggies or over a bed of rice or pasta to soak up the delicious sauce.
