Mediterranean Chicken Wraps

2 boneless, skinless chicken breasts

1 cup Greek yogurt

2 tablespoons olive oil

1 tablespoon lemon juice

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

4 large whole wheat wraps

1 cup mixed greens (arugula, spinach, etc.)

1/2 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/3 cup feta cheese, crumbled

Kalamata olives, pitted and halved (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes, or overnight for more flavor.

    Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade, letting the excess drip off. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Transfer to a cutting board and let it rest for 5 minutes before slicing into thin strips.

      Prepare the Wraps: While the chicken is resting, prepare your ingredients. Slice the cherry tomatoes, dice the cucumber, and thinly slice the red onion.

        Assemble the Wraps: Lay a whole wheat wrap flat on a clean surface. Start with a handful of mixed greens, then add a portion of sliced grilled chicken. Top with cherry tomatoes, cucumber, red onion, crumbled feta, and olives if using.

          Wrap It Up: Fold in the edges of the wrap and then roll from the bottom up tightly. Repeat with the remaining wraps.
