Mediterranean Quesadillas

4 large whole wheat tortillas

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

1 cup cooked spinach (fresh or frozen, squeezed dry and chopped)

1/2 cup sun-dried tomatoes, chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup red onion, finely sliced

1 teaspoon dried oregano

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preparation of Ingredients: If you haven’t done so, cook the spinach (if using fresh) by sautéing it in a pan for a couple of minutes until wilted. If using frozen spinach, thaw and squeeze out excess moisture.

    Mix the Filling: In a mixing bowl, combine the cooked spinach, crumbled feta, shredded mozzarella, sun-dried tomatoes, Kalamata olives, red onion, oregano, salt, and pepper. Mix well to ensure all ingredients are evenly distributed.

      Assemble the Quesadillas: Heat a non-stick skillet over medium heat and add a little olive oil. Place one tortilla in the skillet, and on one half of it, spread a generous amount of the Mediterranean filling. Fold the other half of the tortilla over the filling.

        Cook and Crisp: Cook the quesadilla for about 3-4 minutes on one side until it golden and crispy, then flip gently with a spatula and cook for another 3-4 minutes on the other side. Continue until the cheese is melted and the tortilla is evenly golden brown.

          Repeat: Remove the quesadilla from the skillet and let it cool slightly. Repeat the process with the remaining tortillas and filling.

            Serve: Slice the quesadillas into wedges and arrange on a serving plate. Garnish with fresh basil leaves if desired, and serve with a side of tzatziki sauce or hummus for dipping.
