Ingredients

2 cups watermelon, cubed

2 cups cantaloupe, cubed

2 cups honeydew melon, cubed

1 cup cucumber, thinly sliced

1/2 cup red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 2 limes

2 tablespoons olive oil

1 tablespoon honey

Salt and pepper to taste

Lime zest for garnish

Instructions

Prepare the Melons: Using a sharp knife, cut the watermelon, cantaloupe, and honeydew into bite-sized cubes. Place them in a large salad bowl.

Add Additional Ingredients: Thinly slice the cucumber and red onion. Add both to the bowl with the melons.

Mix the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.

Combine and Toss: Pour the dressing over the melon mixture and gently toss to combine. Be careful not to mash the melon cubes.

Add Fresh Herbs and Cheese: Sprinkle the chopped mint leaves and crumbled feta cheese over the salad, if using. Give it another gentle toss to distribute evenly.

Garnish and Serve: Finish the salad with a sprinkle of lime zest on top for an extra burst of flavor. Chill in the refrigerator for 15-30 minutes before serving to allow the flavors to meld.

Enjoy: Serve the salad cold, ideally as a refreshing side dish or a bright addition to any summer gathering.
