12 corn tortillas

1 lb ground beef (or ground turkey)

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 can (8 oz) tomato sauce

1 packet taco seasoning

2 cups corn (frozen or canned)

1 cup diced bell peppers (mixed colors)

1 medium onion, diced

2 cloves garlic, minced

2 cups shredded Mexican blend cheese

1 cup sour cream

½ cup chopped fresh cilantro (for garnish)

Salt and pepper to taste

Optional toppings: sliced jalapeños, avocado, or lime wedges

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prep the Meat Mixture: In a large skillet over medium heat, add a splash of oil and sauté the diced onion and garlic until translucent. Add the ground beef (or turkey) and cook until browned. Drain any excess fat.

      Add Vegetables: Stir in the diced bell peppers, corn, black beans, diced tomatoes with green chilies, and taco seasoning. Mix well and cook for about 5-7 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

        Assemble the Lasagna: In a 9x13 inch baking dish, spread a thin layer of tomato sauce on the bottom. Layer 3 corn tortillas over the sauce. Spread 1/3 of the meat mixture over the tortillas, followed by a layer of sour cream and 1/2 cup of shredded cheese. Repeat this process two more times, finishing with a layer of tortillas, remaining tomato sauce, and top with the remaining cheese.

          Bake the Lasagna: Cover the baking dish with aluminum foil (to prevent sticking, you can spray foil with cooking spray). Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

            Let it Rest: Once baked, remove the lasagna from the oven and let it rest for about 10 minutes. This will help the layers set for easier slicing.

              Serve and Garnish: Cut into squares and serve warm, garnished with fresh cilantro. Add optional toppings like jalapeños, avocado slices, or lime wedges for an extra burst of flavor.
