1 (10 oz) can diced tomatoes with green chilies (like Ro-Tel)

1/2 cup cream cheese, softened

1/4 cup milk (adjust for consistency)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon chopped fresh cilantro (optional, for garnish)

Prepare Cheese Mixture: In a medium-sized mixing bowl, combine the shredded sharp cheddar and pepper jack cheeses.

    Heat Ingredients: In a medium saucepan over medium heat, add the softened cream cheese, diced tomatoes with green chilies (including the liquid), and 1/4 cup of milk. Stir until the cream cheese melts and the mixture is smooth.

      Season It Up: Sprinkle in the garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper. Stir to combine all the flavors.

        Add Cheeses: Gradually add the cheese mixture to the saucepan, stirring continuously until all the cheeses are melted and the dip is creamy. If the mixture is too thick, add more milk a tablespoon at a time until the desired consistency is reached.
