Ingredients

1 cup elbow macaroni

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup milk

2 tablespoons unsalted butter

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1/2 cup panko bread crumbs

1/2 teaspoon smoked paprika (optional)

Cooking spray

Instructions

Cook the Pasta: Bring a pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Whisk in the milk, garlic powder, onion powder, salt, and pepper. Gradually stir in the cheddar and Parmesan cheeses until melted and smooth.

Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and stir until the pasta is fully coated. Let this mixture cool for about 15-20 minutes, allowing it to firm up slightly.

Form the Poppers: Once the macaroni mixture has cooled, use your hands to form small balls (about 1 inch in diameter). If the mixture is too sticky, you can moisten your hands with a little water to make the process easier.

Coat the Poppers: In a shallow dish, combine the panko bread crumbs with smoked paprika. Roll each macaroni ball in the bread crumbs until evenly coated.

Preheat the Air Fryer: Preheat your air fryer to 360°F (182°C) for about 5 minutes.

Air Fry the Poppers: Lightly spray the air fryer basket with cooking spray. Place the coated mac & cheese balls in a single layer in the basket, making sure they are not overcrowded. Spray the tops lightly with more cooking spray.

Cooking Time: Air fry the poppers for 8-10 minutes, or until they are golden brown and crispy. You may need to shake the basket halfway through to ensure even cooking.

Serve: Remove the mac & cheese poppers from the air fryer and let them cool for a minute. Serve them warm with your choice of dipping sauces, such as marinara or ranch.
