Ingredients

1 can (20 oz) young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

1 cup BBQ sauce (your favorite brand or homemade)

Salt and pepper, to taste

12 small slider buns

1 cup coleslaw mix (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions

Prepare the Jackfruit: Start by using your hands or a fork to shred the jackfruit into smaller pieces. Remove any seeds and tough core parts. Rinse it under cold water and set it aside.

Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and continue to sauté for another minute until fragrant.

Cook the Jackfruit: Add the shredded jackfruit to the skillet with the sautéed onions and garlic. Season with smoked paprika, ground cumin, chili powder, salt, and pepper. Stir well to combine, cooking for about 5 minutes.

Add BBQ Sauce: Pour in the BBQ sauce, stirring to coat the jackfruit evenly. Let it simmer for about 10-15 minutes, stirring occasionally, until the jackfruit is heated through and has absorbed the flavors from the sauce.

Toast Slider Buns: While the jackfruit is cooking, preheat your oven to 350°F (175°C). Place the slider buns on a baking sheet and toast them in the oven for about 5 minutes or until warm and slightly crispy.

Assemble Sliders: To assemble, take a toasted slider bun, add a generous portion of the BBQ jackfruit mixture on the bottom half. If desired, top with coleslaw for an added crunch and freshness. Place the top half of the bun on and gently press down.

Garnish and Serve: Optionally, garnish with fresh cilantro or parsley. Serve your mini BBQ jackfruit sliders warm with extra BBQ sauce on the side for dipping!
