2 cups frozen tater tots

6 large eggs

1/2 cup milk

1 cup diced bell peppers (any color)

1/2 cup diced onions

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon or breakfast sausage (optional)

Salt and pepper to taste

Cooking spray or oil for greasing

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Grease a muffin tin with cooking spray or pour a little oil into each cup to prevent sticking.

    Prepare the Tater Tot Crust: In a mixing bowl, take the frozen tater tots. Using a fork or your hands, crush them slightly to break them down, but not completely. Fill each muffin tin cavity with approximately 3-4 crushed tater tots and press them firmly down to form a crust. Bake the tater tots in the preheated oven for about 10 minutes until they are golden and crispy.

      Mix the Egg Filling: While the tater tots are baking, whisk together the eggs and milk in a separate large bowl until well combined. Season with salt and pepper. Stir in the diced bell peppers, onions, shredded cheese, and bacon or sausage (if using).

        Fill the Muffin Tin: After the tater tots have baked for 10 minutes, remove the muffin tin from the oven. Carefully pour the egg mixture into each tater tot crust, filling each cup about 3/4 full.

          Bake the Omelets: Return the muffin tin to the oven and bake for an additional 15-20 minutes, or until the egg is set and the tops are lightly golden.

            Cool and Serve: Once baked, let the mini omelets cool in the tin for about 5 minutes before carefully removing them. Use a small spatula or knife to help lift them out. Serve warm or allow to cool completely and store in the refrigerator for later meals.
