4 small flour tortillas

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup shredded mozzarella cheese

1/2 cup cooked and crumbled breakfast sausage (or bacon/vegetarian alternative)

1/4 cup chopped bell peppers (red, green, or both)

1/4 cup finely chopped onion

Salt and pepper to taste

1 tablespoon olive oil or butter

Fresh cilantro or parsley for garnish (optional)

Salsa or hot sauce for serving (optional)

Instructions
 

Prepare the Filling: In a medium bowl, whisk together the eggs, and season with salt and pepper. Stir in the cooked sausage, cheddar cheese, mozzarella cheese, bell peppers, and onion until well combined.

    Cook the Eggs: Heat the olive oil or butter in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are just set but still creamy (about 3-4 minutes). Remove from heat and let cool slightly.

      Assemble the Quesadilla Pockets: Place one tortilla on a clean surface. Spoon about 1/4 of the egg filling onto one half of the tortilla, folding the other half over to create a pocket. Press down gently to seal. Repeat with the remaining tortillas and filling.

        Cook the Quesadilla Pockets: In the same skillet, lightly wipe it clean and place over medium heat. If needed, add a bit more oil or butter. Carefully place each quesadilla pocket in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.

          Serve: Cut each quesadilla pocket in half and garnish with fresh cilantro or parsley if desired. Serve warm with salsa or hot sauce on the side for dipping.
