1/2 cup milk

1 cup cooked breakfast sausage, crumbled

1/2 cup bell pepper, diced (any color)

1/2 cup red onion, finely chopped

1 cup shredded cheddar cheese

1 cup taco seasoning mix (or to taste)

1 package (small) tortillas (small size, about 4 inches)

Fresh cilantro, chopped (for garnish)

Salsa (for serving)

Cooking spray or olive oil (for greasing)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare Muffin Tin: Lightly grease a muffin tin with cooking spray or a few drops of olive oil to prevent sticking.

      Whisk Eggs: In a large mixing bowl, whisk together the eggs and milk until well combined. Season with taco seasoning to enhance flavor.

        Sauté Vegetables: In a skillet over medium heat, add the diced bell pepper and onion. Sauté for about 3-4 minutes, or until they are slightly softened.

          Combine Ingredients: Remove the skillet from the heat. In a large bowl, combine the crumbled breakfast sausage, sautéed vegetables, and shredded cheddar cheese. Mix well.

            Fill Muffin Tin: Place one tortilla into each muffin tin cup, pressing it against the sides to create a small cup. Pour the egg mixture evenly into each tortilla cup, filling them about 3/4 full. You can add more cheese on top if desired.

              Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the egg is set and the tortillas are golden brown.

                Cool and Serve: Once cooked, remove the muffin tin from the oven and allow the mini breakfast tacos to cool for a few minutes. Carefully remove them using a spoon or knife.
