1 medium eggplant, sliced into 1/2-inch thick rounds

1 cup cherry tomatoes, halved

8 oz fresh mozzarella cheese, sliced into rounds

1/4 cup fresh basil leaves

2 tbsp balsamic glaze

3 tbsp olive oil

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp Italian seasoning

Slider or small sandwich buns (4-6, depending on the size of your eggplant slices)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Eggplant: Arrange the eggplant slices on a baking sheet lined with parchment paper. Brush both sides with olive oil, and season with garlic powder, salt, black pepper, and Italian seasoning.

      Bake the Eggplant: Bake the eggplant in the preheated oven for 20-25 minutes, flipping halfway through, until the slices are golden brown and tender.

        Assemble Sliders: Once the eggplant is done, remove it from the oven. On the bottom half of each slider bun, layer a slice of baked eggplant, followed by a slice of fresh mozzarella, a few halves of cherry tomatoes, and a few basil leaves.
