1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 cup shredded sharp cheddar cheese

1 cup buttermilk

½ cup honey

2 large eggs

½ cup melted butter (plus extra for greasing)

1 cup cooked and crumbled sausage (optional)

½ cup chopped green onions (for garnish)

Sliced jalapeños (optional, for added heat)

Instructions
 

Preheat the oven to 375°F (190°C) and grease a mini muffin tin with melted butter or non-stick spray.

    In a large bowl, whisk together the cornmeal, flour, baking powder, and salt until well combined.

      In another bowl, mix the buttermilk, honey, eggs, and melted butter until smooth.

        Pour the wet ingredients into the dry ingredients, stirring until just combined. Take care not to over-mix; a few lumps are okay!

          Fold in the shredded cheddar cheese and crumbled sausage (if using) until evenly distributed.

            Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full. This will allow room for the sliders to rise.

              Bake in the preheated oven for approximately 12-15 minutes, or until they are golden brown and a toothpick inserted in the center comes out clean.

                Remove from the oven and let the cornbread muffins cool for a few minutes before transferring to a wire rack.

                  To assemble the sliders, slice each cornbread muffin in half horizontally. If you prefer, you can toast the insides lightly for extra texture.

                    Layer on your favorite fillings such as a slice of cheese, a dollop of sour cream, and a handful of green onions or jalapeños.
