Mini Chicken Alfredo Pizza Bites

1 cup cooked chicken, diced

1 cup Alfredo sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 package of pre-made pizza dough (about 1 lb)

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Olive oil for brushing

Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the dough: On a lightly floured surface, roll out the pizza dough to about 1/4 inch thickness. Use a round cutter (about 3-4 inches in diameter) to cut out circles from the dough. You should get about 12-16 circles depending on the thickness of your dough.

      Make the chicken mixture: In a mixing bowl, combine the diced chicken, Alfredo sauce, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Stir well until the chicken is coated and the mixture is homogeneous.

        Assemble the pizza bites: Place the cut dough circles on the prepared baking sheet. Spoon about a tablespoon of the chicken Alfredo mixture onto the center of each dough circle, ensuring not to overfill.

          Fold and seal: Gently fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal so that the filling doesn’t leak out during baking. You can also crimp the edges with a fork for extra security.

            Brush with olive oil: Using a pastry brush, lightly brush the tops of the pizza bites with olive oil. This will help achieve a golden, crispy crust.
