Mini Chicken Fajita Pizza Bites

1 lb (450g) boneless, skinless chicken breast, diced

1 medium bell pepper (any color), thinly sliced

1 small red onion, thinly sliced

2 tablespoons olive oil

2 teaspoons fajita seasoning

Salt and pepper to taste

1 package of pre-made mini pizza crusts or puff pastry (about 12-14 pieces)

1 cup shredded mozzarella cheese

1/2 cup salsa

Fresh cilantro, chopped (for garnish)

Optional: sliced jalapeños or sour cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Cook the Chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced chicken breast. Season with fajita seasoning, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and golden. Remove from heat and set aside.

      Sauté the Vegetables: In the same skillet, add another tablespoon of olive oil. Add the sliced bell pepper and red onion. Sauté for about 3-4 minutes until the vegetables are slightly softened but still crisp. Remove from heat.

        Assemble the Pizza Bites: On the prepared baking sheet, arrange the mini pizza crusts or puff pastry. For each crust, spread a spoonful of salsa as the base. Top with the cooked chicken, followed by the sautéed vegetables, and a generous sprinkle of mozzarella cheese.

          Bake: Place the baking sheet in the preheated oven. Bake for 10-12 minutes, or until the cheese is bubbly and the crust is golden brown.

            Garnish and Serve: Remove from the oven and let cool for a couple of minutes. Garnish with chopped cilantro. If desired, add sliced jalapeños or a dollop of sour cream on top before serving.
