1 lb (450g) boneless, skinless chicken breast, thinly sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, thinly sliced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon fresh lime juice

For the Waffle Wraps:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

2 tablespoons sugar

2 large eggs

1 ¾ cups milk

½ cup vegetable oil

For Assembly:

1 cup shredded Monterey Jack cheese

½ cup sour cream

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken Fajitas:

    - In a large bowl, combine the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Toss until well coated.

      - Heat a large skillet over medium-high heat and add the marinated chicken and vegetables. Cook for about 6-8 minutes, stirring frequently, until the chicken is fully cooked and the vegetables are tender.

        - Remove from heat and drizzle with fresh lime juice.

          Make the Waffle Wraps:

            - Preheat your waffle maker according to the manufacturer's instructions.

              - In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.

                - In another bowl, beat the eggs, then add the milk and vegetable oil, whisking until combined.

                  - Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).

                    - Lightly grease the waffle maker and pour the batter into the preheated waffle maker, cooking until golden brown and crisp (about 3-5 minutes, depending on your machine).

                      - Carefully remove the waffles and place them on a wire rack while you continue making more.

                        Assemble the Mini Wraps:

                          - Take one waffle and place a generous spoonful of the chicken fajita mixture in the center. Sprinkle with shredded Monterey Jack cheese.
